GAZPACHO RECIPE

Eating tomatoes on a regular basis is one of the healthies habits you can keep. Tomatoes are rich in Lycopene content, an antioxidant that helps in the fight against cancerous cell formation and other health complications.

There's a dish rich in tomato that is typical in many Spanish speaking countries. Gazpacho is a refreshing and delicious tomato soup that won't take you long to prepare.

Grab a pen and add the following items to your shopping list:

-1 can of plum tomatoes - chopped
-3 tablespoons white vinegar
-3 tablespoons oil
-2 garlic cloves - minced
-1/4 teaspoon salt
-1 medium onion - chopped
-1 medium cucumber - peeled and chopped
-Croutons (optional).
 

1. Combine all the ingredients in a blender and blend until smooth.
2. Cover and refrigerate for about  four hours.
3. Before serving, add croutons to the gazpacho and enjoy!
